2 large cans LeSeur Peas, drained well
4 oz. grated cheddar (I usually use sharp or extra sharp)
1/2 small onion chopped very fine
1/2 - 3/4 cup mayo (usually use Duke's)
Pinch of salt
Paprika
2 hard boiled eggs sliced
Mix first five ingredients. Lay sliced eggs on top and sprinkle with paprika.
(Goes well in a 8x8 casserole or glass dish.)
