Who doesn't love feta and red pepper??
7 oz feta cheese crumbled
1 red bell pepper roasted and peeled (1 7-oz jar)
2 cloves garlic blanched
1 tbsp olive oil
Just throw in blender then garnish with chopped cilantro!

Brooke's Apple Dumpling Gang
INGREDIENTS
3 granny smith apples (others work, but tart is best)
2 cans crescent dough
1/2 c. (1 stick) butter, plus more for greasing pan
1 c. brown sugar
1 1/2 tsp. cinnamon
1 tsp. pure vanilla extract
Pinch kosher salt
3/4 c.lemon-lime soda
DIRECTIONS
Preheat oven to 350° and grease a 9x13 dish with butter. Peel and core apples, cut or slice into 5-6 pieces.
Separate crescent dough into triangles. Starting at the wider end, roll one apple slice up in a crescent triangle. Repeat with all. Place into prepared greased pan.
In a small saucepan over medium heat, melt butter, brown sugar, cinnamon, vanilla, and salt (leave out if using salted butter) together. Pour mixture over apples.
Pour soda around edge of pan, trying to avoid pouring on top of dumplings. Bake dumplings until golden, 30 minutes.
Best when warm, a la mode, but good anytime!

Melt-in-your-mouth-moist-chicken-tenders-in-lemon-butter-cream-sauce-gluten-free-organic EASY Recipe!
Ok, that title might be a bit overkill, but the recipe is super easy and can be easily done with all organic ingredients AND no flour was harmed in the making AND everyone in the family likes it (as rare as a Quagga - see HERE ). But just as it has been recently found that some animals thought extinct are not quite extinct, I have found that I can actually cook a decent meal that is both healthy and tasty without having to learn any cooking skills (as I am sure you know, I am NOT fond of cooking - baking, yeah, ok, somewhat like it but regular day-to-day cooking I find just a pain necessity). So here goes my version:
2 - While butter melts, cut and squeeze 1 Large Lemon into cup
3 - Generously season 1 Lb. Chicken Tender Cutlets with Sea Salt, Black Pepper, and Ground Paprika
4 - Saute cutlets on Medium High in butter until browned on both sides, adding Minced Garlic (to taste) and 1/2 tsp or so of Thyme to butter
5 - Add 1 Cup Chicken Broth and 1/4 cup cream (I had none on hand so just used 1/3 cup milk and simmered a bit longer) along with lemon juice and simmer slowly until done.
Serve over or with rice, add a broccoli raisin or seven layer or tomato cucumber salad (my favs) and dinner is done. No children yelled at, no hungry hubbies, no stress over not knowing the difference between a carving knife and a paring knife.........

Emma Kate's Shakshuka with Feta
INGREDIENTS
- 3 Tbsp olive oil
- 1 large onion, halved, thinly sliced
- 1 large red bell pepper,thinly sliced
- 3 garlic cloves, thinly sliced
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- 1/8 teaspoon cayenne, or to taste
- 1 (28 oz) can diced tomatoes, slightly drained
- ¾ teaspoon salt, more as needed
- ¼ teaspoon black pepper, more as needed
- 4 ounces feta cheese, crumbled (about 1 1/4 cups) (or more)
- 4 large eggs (or more)
- Chopped cilantro, for serving
- Hot sauce, for serving
- Optional: Meatballs or summer sausage
Heat oven to 375 degrees.
Heat oil in a large skillet over medium low heat. Add onion and bell pepper. Cook gently until very soft, about 20 minutes.
Add garlic and cook until tender, 1 to 2 minutes; stir in cumin, paprika and cayenne, and cook 1 minute.
*If desired, add meatballs or sliced summer sausage. Pour in tomatoes and season with 3/4 teaspoon salt and 1/4 teaspoon pepper; simmer until tomatoes have thickened, about 10 minutes.
Sprinkle with cilantro and serve with hot sauce.
- Gently crack eggs into skillet over tomatoes. Season with salt and pepper. Transfer skillet to oven, add feta sprinkled on top and bake until eggs are just set, 7 to 10 minutes.

Daniel's Garlic Fried Rice:
Use rice made from the day
before after it’s been refrigerated.
Lots of chopped garlic (I used
7-10 cloves for 3c of dry rice)
Fill the pan/wok with oil. Maybe
¼ - ½ c.
Heat up and add garlic. Once
it’s crisped up a bit add the rice and constantly mix (I like to use 2 wooden
spoons) until rice has sucked up most of the oil and is a bit crispy (also add
some salt and pepper in this step). You can top with chives and fried garlic
and use as a side rice. Or make a meal out of it and add whatever you want to
it. Usually for breakfast Filipino’s add eggs and longanisa (chorizo/sausage).
Sumeyya’s Chickpea recipe:
Sauté 1 diced onion in about 1
tbsp oil until the onions are brown. Add garlic and ginger. Let it fry for a
bit. Add about ½ cup crushed/diced tomatoes, 1 tsp cumin, 1 tsp salt, 1
tsp cayenne powder, ½ tsp turmeric. Mix together and let simmer for 1 minute.
Add diced potatoes and 3 cans chickpeas. Mix together for about 1 min. Then add
enough water to cover the chickpeas & potatoes. Cook on medium/low about 20
mins or until potatoes are soft. Mix one or twice during the 20 mins. Garnish with
cilantro. (I didn’t use measuring spoons so all measurements are approximate J)
